well you could try to look at the file on the computer, see if you can make heads or tails out of the files. But user can always purge history, AND each program is going to have it's own files to look at. And private browsing dosen't leave any thing to look at.
Turning on perental controls, would probable be an easier way to get web history. Or installing another similar parental control system for internet activty.
Another option would be to put some sort of webfilter/content filter on your network. m86, Barracuda, both make content filters that include a log to look at. This would allow you to not just block content on your lab computers, but other devices on the network.
