Get BetterTouchTool (free)
it has iTunes mute, pause, play, volume up/down, next/previous actions. You can bind them to a hotkey combination, or a trackpad gesture, or Magic Mouse gesture, or multi-button mouse button.
And once you have BetterTouchTool, you can create other hotkeys, trackpad gestures, etc... It think BTT is essential for any trackpad user.

Found it! Significator for itunes in the app store. I don't even think they advertise the key shortcuts, but it's there under preferences once you open the app. I think I must be missing something obvious though, since I found so little about this and it seems so basic. Maybe it's built into itunes...
