You can restore from backup, or as new. Backup will be what was stored on your phone in that backup. New will be as factory new.

Are you asking if you'll lose your unlock status? If so, no. If your phone is officially unlocked, it will remain unlocked, regardless of how you restore.

I disagree here. I just got my iPhone4 unlocked from ATT/Apple (officially) and the restoring of data FAILS because iTunes sees the SIM card differently now. This was confirmed on the phone with Apple and ATT. Make sure you have other ways to get to ALL of your data if you're going to unlock your SIM.

hii there, i have bought iphone 5 it is factory unlocked from usa i purchased it second hand in india i am not able to software update my phone (currently ios6).. it is also jailbroken (cydia).. and also i am not able to reset my phone it just hangs for 40 odd minutes then i have to hard restart...
questions are :
1.if i update to ios7 through itunes will it cause some problems as it is jailbreak.(as said by everyone)
2.if i restore to factory settings will it get locked again (as i am not sure whether this phone is carrier unlocked or unlocked by my local retailer).
i am ready to remove jailbreak.
