Try seperate accounts on your computer first. IE make sure you and each of your offsping log in seperastly each time also make sure you have seperate I tunes accounts. I maintain a total of 5 offspring and this worked for them.

Also, my kids are both using my email account for their itunes account, which I like because then I can see what they are buying and downloading, but they hate getting each other's songs. Do I need to have another email account in order to seperate them?

Here is what I did and somebody else may have a better suggestion. I set up separate user profiles on my main computer. then I set up separate email accounts "that I maintain" then I set up their apple ID's. when they log in to their accounts on the computer they can only see the content they have downloaded regardless of ITunes or not. They have to check with me before downloading any content. As the computers "Administrator" I am the all seeing eye. Just make sure you and your significant other are the only administrators, and that the children are standard users on your computer. Hope this helps.
