First, do you mean that you are importing music from CD's to iTunes.
If so Apple Lossless is a good solution for the best quality of sound and best use of hard drive space. The other options would be either WAV or AIFF, which are much larger files vs Apple Lossless.

Dear Joe - thank you coming back to me.. yes, I did mean 'importing' cd's - not 'burning'. I'm a novice.
I adjusted the settings accordingly on Mac and that will now give me best recording quality by sounds of it.
The problem I've now encountered is that when I 'import' cd's to iTunes my Mac is making all the right noises (cd whizzing away and the timer chugging across) and I can see the 'import' is taking place and the Mac 'pings' me when it's finished (is quick!) - but then I'm unable to see the cd in my playlist library...?
Do you have any thoughts on where these imports are disappearing too ?

I guess it depends on what version of iTunes you're using, but generally the songs would import into your Library. In the Library, look for the songs in either Artist or Album view.
