If you have iTunes 11 then you can enable the left-hand sidebar via control-S on a PC, which might make it easier - if you connect and select the iPad on that left-hand sidebar you can then use the tabs on the right-hand to select and sync your content to the iPad.

For syncing audiobooks (and ibooks for the iBooks app) you use the Books tab on the right-hand side (assuming that theyare in the Books part of your iTunes library), in a similar way as for music. Audiobooks will go into the Music app (when there are audiobooks on the iPad you should get an Audiobooks option under the More button at the bottom of the Music app).
For content to third-party ebook or other apps it will depend upon what the app supports - different apps will have different ways of copying their content to/from a computer e.g. via the file sharing section at the bottom of the device's apps tab when connected to iTunes, via wifi, email, dropbox etc. ebook apps such as Kindle, Nook, Kobo etc allow you to link them to your accounts with those stores and download your ebook purchases from them directly within the app
