The iCloud backup includes the following information:

    1. Photos and videos in the Camera Roll
    2. Device settings (for example: Phone Favorites, Wallpaper, and Mail, Contacts, Calendar accounts)
    3. App data
    4. Home screen and app organization
    5. Messages (iMessage, SMS, and MMS)
    6. Ringtones
    7. Visual Voicemails

If you have everything turned on in your backup settings, and the backup completes successfully, what makes you think this information is not being backed up?

You can't see you photos on; you can only view them on your device.  You can tell if it backed up successfully by going to Settings>iCloud>Storage & Backup, then at the very bottom look for "Last Backup: [date]".  If it backed up successfully you will see a backup date within the last 24 hours.

If your notes aren't appearing on, try creating a new one, then see if it appears there after a few minutes.  If it does, then you will have to copy and paste the text of your existing notes into new notes to get them to sync to iCloud.
