Are the apps and musci on your computer?
If not, then they will not be on your iphone.
The backup that itunes performs does not include itunes content.

Great question...that was one of my concerns. I back up to two different computers. One is a Mac, and long story short, I can't update via that comp because of outdated OS (needs new iTunes, which needs new OS, etc...). So the music is on THAT computer, not the one from which the new phone was initialized.
This brings up a new question - I just ordered Snow Leopard, which I'll have by Thursday. I'll install that onto my Mac, download updated iTunes, and then update my phone. Will the music then transfer over?

It will, or you can simply copy all the content from the Mac to the PC then sync from there.

VDUB - Can you explain how I can copy the info from Mac to PC? I've been unable to do so to date. If I can figure that much out (PC has 250GB HD, so it shouldn't be tough), my life will become incredibly less complicated.

All iTunes information is in the iTunes folder. Simply copy the ENTIRE iTunes folder from the Mac to the PC.
