We have a production server running Mountain Lion Server. I would like to set up another server to replicate data over to it as it is written to the production server. Does anyone know if this is possible and if so how?

OS X Mountain Lion (10.8.2)

What sort of data - files, databases?, and what sort of frequency - timed, on data change, and initiated by what?

If you want a simple data synchronisation then the utility 'rsync' is actually very powerful tool for efficiently syncing files, folders and folder trees. It can be kicked off at set time intervals using crontab.

Again though question is what do you mean by "replicate data"?
