It is working reliably for me at the moment with my work email, contacts, calendars, reminders and notes. It could be affected by the version of the Exchange Server that your work is running.
To (attempt to) fix the issue with not being able to access preferences in Calendar, it might help to delete the account through the "Mail, Contacts & Calendars" preference pane, and then set it up again.

I've got to say that I find Apple's Mail and Calendar and Contacts integration with Exchange the weakest it's ever been.
Might be true for you, but not for everyone. E.g. not for me.
PS. I'm using a brand new MBP with Retina and the very lastest OSX and updates and everything.

More importantly, what Exchange server version is at the other end? In brief, since years the word is out for OS X: " Make sure it's the latest MS Exchange server to avoid trouble..."
when I click Preferences to check the settings it immediately hangs and crashes.
You seem to be a long-term Apple user, knowing how to delete preference .plist files? I'd do so to start with.

We're using Exchange 2010 with all the latest service packs and roll backs etc.
Everything to do with Exchange integration on iOS works beautifully and I've never had a problem. Everything to do with Exchange integration on OSX is very, very, problematic. I'm not sure how or why.
I've noticed on Calendar if I let it hang (and leave the spinning wheel for several minutes) and despite Force Quit suggesting it's not responding, after a few mins it does actually then open Preferences. However, it takes many, many minutes to then update entries. And I'm forever getting spurious reminders and "Calendar doesn't like something to do with invitees and do I want to Ignore it". Needless to say I don't ever have any problems with Calendar on iOS.
Re. my signature, I have several iMacs and an MBA as well as this new MBP Retina but I will try to remember to update it
Lewis Hamilton leaving McLaren? I think it's a good thing. He's a great driver but he needed to move on and I think the team wanted him to move on too. From what I hear from people who work at McLaren Woking (just up the road from me) he was an ar5e to work with whereas Button was a gentleman.

...again, for you, unfortunately. Not in general. So, it must be something in your, or your Exchange server's, setup.
2010 should generally work, it does for me. Although the IT guy of my client is totally allergic against Macs, he gave me a list of all parameters needed, though I didn't need it: Mail set it up automatically, and it all worked well instantly.
I trust your network/Exchange admin helps you verifying your settings?
Before digging into the OS and deleting anything, and since you're referring to this "brand-new MBP":
- Does the Exchange account work on your other Macs with older OS X versions?
- How did you set up the new MBP; fresh from scratch, or by migrating an entire account or at least some data from a different Mac?
You see what I'm aiming at:
You having a backup anyway (yes?), completely delete the present Exchange account from your MBP (this will delete anything stored locally under the account - save it first!), re-start the machine, and set up the account from scratch...
You should be able to "simulate" this as well by temporarily creating a new user on your MBP, and create the Exchange account there. Since it's for testing purposes only, you can immediately afterwards delete that account again incl its home folder.
- If it works under that account, you may proceed and start from scratch in your original account. Or move all your data and docs from the old to the new account and delete the old account then.
- If it doesn't work, then there is really something generally wrong in between the server and your machine. Unless your Exchage admin can solve it, the remaining options are few and ugly...

The first point I was making is that anything iOS works beautifully with our Exchange server. It plugs and plays and always has done. Mail, Calendar, Contacts. It syncs and it works beautifully. The very same Exchange server (and settings) with OSX is very, very, weak. And don't start me please with using Mail with Yahoo! and how Mail on OSX puts your sent messages in a completely different Sent folder than what Mail for iOS puts them and everything else. But, back to Exchange.
I am using Mail etc. on two other iMacs as well as this new MBP. Just yesterday I set up Mail on my new iMac and it takes just seconds to install and configure. And then you go in to Mail and it takes forever (well 30 mins approximately) for Mail to say "ahhh, you have 35 messages in your Inbox and I'll now sync them".
I'm at work currently and opened up my MBP and went in to Mail. I knew there was a message from Fred Bloggs as I'd just read it on my iPhone. It's not in Mail, nope. About 10 mins later it decided to sync. And yes, I have Mail set to check for messages every 1 minute. And when I go in to Contacts? It syncs and stays with a twirly symbol for ever and never actually stops syncing. And Calendar, it still does the same thing. Hangs when you open Preferences, suggests it needs a Force Quit as it's stopped responding but after about 10 mins it does open the Preference box.
Yet it all works beautifully on iOS and never misses a beat. You can see my point?
In answer to your question (and I appreciate your help and input and all suggestions - I'm just bleating at these annoying problems) it was a new MBP and new account (no migration from another Mac) and it's exactly the same on other Macs I have. Never used to be this bad. Definitely got worse since Mountain Lion in my opinion.
And why, when you try to get Mail to poll by clicking the Get New Messages (when you know on your iPhone there are some to pull down) it says there aren't any and then, miraculously, a number of minutes later, it finds them. I always knew they were there but you can't even manually get Mail to find them, until it feels ready to.
Yet it all works beautifully on iOS and never misses a beat.
I'll probably just have to live with it but thank you for your help.

iOS use software it has developed (licensed under Microsoft ActiveSync) to connect to Exchange. This works beautifully as you describe. It is perfectly designed for the mobile experience - and Microsft only licenses it between the messaging server and a mobile device.
OS X uses Exchnge Web Services to connect to Exchange. This is an inferior experience to ActiveSync, but it is the best available in the absence of true MAPI support (aka Windows MS Outlook). As far as I know, Windows still doesn't support Exchange unless you buy MS Office....

I read your point, have neither objected, always only referred to OS X and MS Exchange, not mentioned Yahoo "and everything else" and do not intend to. Easy, man, easy...
You didn't say it clearly, but I'm half assuming and half reading in between the lines that things do work well with your other Macs, only the MBP with ML causing trouble. If I get this wrong, it's time to state so.
You did not comment at all on my suggestions for further analysis or even fix of the problem, maybe only because you didn't get to it yet but prefer continuing suffering and ranting, or maybe because you don't consider it any use at all.
So then, I shall continue using my flawless and speedy Mail under 10.8.2 with MS Exchange Server 2010 at the other end until I hear back from you with more answers or results rather than bleating...

I did try to answer most of your questions, and I appreciate your input, I was just jumping to the conclusion that my "problem" wasn't simply a "you need to tick this box and voila" and therefore it was going to take a considerable amount of fannying around and I should probably just like it or lump it.
My other Macs at home are also all running the latest everything and also cause very, very similar problems. A few months ago on an iMac I had huge problems opening Contacts. Just crashed every single time. An update from Apple did seem to fix that issue if I recall.
Just now, and surely it can't just be me, I went and copied and pasted an email address and went to paste it in to the To field on an a new email I was composing. It would not paste it in to the To field. I could paste it in to the body of the message without problem (which wasn't much use!) but I could not paste it in to the To field. And that's on this MBP.
Surely that's not just me and another quirk/bug/undocumented feature on Mail for OSX?
I like everything Apple but Mail is not yet anywhere near up to scratch. Every poor sod that uses Yahoo! mail spent ages trying to sort out why sending emails on Mail for OSX would not put them in to the same Sent folder as iOS and every other Mail programme on the planet. That bugged the **** out of me for ages.
Oh and I did used to use Microsoft Office for Mac. That was awful too.
I miss ActiveSync on the old Windows CE devices with an RS-232 cable.

If it was as general of a problem with OS X (Mountain Lion or whichever) and it's apps, you could imagine what this and other forums looked like. Me being one of the bleaters. You could even see it in the value of Apple shares, haha.
But that's not the case. So, back to your case, and what the thread you started is about - no Yahoo, Office, CE, whatever. Or "like it or lump it", but then silently, please.

Are you able to paste an email address in to the To field of a new composing email message? You can in the Subject field and you can in the body of the email. But can you paste it in to the To field (where you're likely to want to paste it).

A brand new MacBook Pro Retina, the latest versions of everything, I can't paste to the To field but you can. I mean, that's not Exchange related either. That's any new composition of an email on any email account!

I have always said and never denied that something is wrong in your setup. Since you started with Exchange, I included that as well. Now, why should not more be affected, and what you see in Exchange is only one symptom?
Launch the Console app and see if you have any error messages. Copy and paste some here, but please only errors, and no need to make it hundreds at this point.
Also, what 3rd-party non-Apple apps (other than Office), drivers and 'tools' such as anti-virus or so do you have installed, running or not?
Aaaaand, are all of those 100% ML-compatible, too?

Just a quick reply between meetings (but thank you once again for the suggestions).
On this MBP is pretty much nothing. I never installed Office for Mac on this. It's pretty much just got the factory-installed stuff and I will admit to sticking on Evernote and Dropbox and Skype and that's about it. Nothing anti virus or other third-party apps.
I'll launch the Console app shortly and post back any errors. Currently on a Windows PC!
