Visual voicemail does not convert voice mail to text so that's not going to be the solution. If you are in the U.S., you can get a Google Voice account and use that voicemail in place of your carrier's voice mail. Google Voice will (attempt to) transcribe the voicemail. All the instructions on how to do this are in the Google Voice help section.

also the iPhone 5 supports visual voicemail but the particular carrier you use has to implement it - not all do

Thanks both of you. My understanding of visual voicemail is not the same as what it really is. I DO have visual voicemail as standard. What I now need is an app or something to covert voicemails to text. I will ask a new question!

search voicemail to test on the app store - i saw a few apps - although one that looked like it may do what you want says its officially only supported on ATT, Verizon and Sprint due to carrier restrictions - there were a few others though
HulloMail or VoiceCloud may do what you want
