As far as I can tell you cant auto capitalize the first word of each sentence. I did however find out how to turn "i" into "I in case that is bugging you as well
Go into System Preferences
Click on Language and Text
Choose the "Text" box on the menu bar
It will bring you to the text substitution thingamajig where you can replace "i" with an "I". Once done it will work on Mail as well as most applications system wide.

This doesn't work because the Language and Text "substitution" function will not allow you to enter a single letter in the "Replace" box. You have to enter at least two characters, and it will not allow you to enter a space as one of those characters. (Without the space every single i you type would be capitalized. Pages 4.3 allowed you to enter spaces, so you could replace "i " with "I ").
