I have a 4s with ios 6.0.1 and can't get definitions to work in ibook and the definition option wont even show up in notes. All I can hope for now is that apple quickly releases an update to fix the problem.

There's a dictionary in iBooks:
iBooks allows you to look up the definition of words using a built-in English, German, Spanish, French, Simplified Chinese, or Japanese language dictionary.

Yes, there are referring to the dictionary. Unfortunately the dictionaries do not work for everyone, and that is the problem.
