I did something similar on a recent trip to Ireland. Used iPhoto to make albums of the various cities we visited. But when we got home and I plugged the iPad into my Mac, when I opened Aperture to import the shots, they were not in the albums I set up. Did not try iPhoto to see if that would see the albums - but I believe I read elsewhere (either here or on a photo site that has a tablet forum) that it is not possible to have them copied over as albums/groups.
Would love to know if you find a solution though.

How to Transfer Photos from an iPad to a Computer

Thanks for the link. However, the approach given there for PC users doesn't address my problem. I can easily get the photos off my iPad, but the folder structure when browsing through Explorer doesn't represent the album structure I set up on my iPad. Therefore using the approach given in your link doesn't allow me to retain the album structure I set up.
It may be the case that if I were using a Mac, then viewing my albums in iPhoto would allow me to do what I want. I find the fact that there doesn't appear to be a workaround for PC users is rather disappointing.
If anyone else has any other ideas they would be greatly appreciated.
calvertj - it appears that so far there is no easy solution. Texas Mac Man's solutions are exactly as you described which is not the solution you or I are looking for. I made exactly the same mistake you did on a recent trip and came home to an extremembly frustrating and disappointing situation. Thanks for your question. Hope someone else comes up with a real solution.
As soon as I posted the previous message I discovered a way to import that is not ideal but at least you can import by dates which in my case worked well because I had off loaded the pictures each way.
When you plug the ipad in the window comes up that asks if you want to down load your pictures.
Click Windows Live
Follow instructions from there.
It has two options:
Review, organize and group OR
Import all new
I had to go to each date but it was considerably easier than importing all and having to surf the whole database.
Hope this helps. I just finished mine and am extremely happy to have found a way to accomplish the task.
