I have just been setting up my email accounts in Mail on Mountain Lion.

I was wondering, is there a way that when I delete a email that I have to provide conformation before the deletion takes place?

I've had a look around Mail, but couldn't find a setting for this.

No but it will be in your mail trash.

Here you can control trash can behavior.

    Mail>Preferences>accounts>Mailbox behavior

    Thanks for the help leroy.

I didnt realize it would be that easy. I'm still finding my way around my Mac (as its my first Mac). I simple dragged and dropped the deleted email and drop it back into the inbox again

Yes, and command-Z will usually undo the last action.
