Why Apple designed the iPod Classic to list Podcasts in reverse chronological order is one of life's mysteries!
The usual solution is to create a Playlist, putting the Podcast episodes in the order that you want to hear them, and then use the Playlist. You can either create the Playlist in iTunes and then Sync it with the iPod, or create an On-The-Go Playlist on the iPod itself.
However, note that Podcasts are set, by iTunes, to Skip when shuffling, which means that if your iPod is set to Shuffle when you start the first episode of the Playlist, then the iPod will stop after the first episode completes, because all other items in the Playlist are set to skip when shuffling.
So, make sure that Shuffle is turned off before starting a Playlist of Podcasts.
Settings/Shuffle>Off-Songs-Albums. It toggles between the three.
