I'll continue to use FCP7.

How much of a speed increase am I going to see if I run it on the newest 27" iMac *(3.2 GHz quad-core Intel Core i5 processor) compared to my mid-2008 iMac (Intel Core 2 Duo Processor Speed:          2.8 GHz)?

Is rendering going to be noticeably faster?

YOu won't notice much.  FCP 7 is still 32 bit...and getting long in the tooth. You might gain a few seconds in render time, but nothing earth shattering.  Exporting...might see 1.5 to 2x speed.
