When I open preview, and use the import from "my scanner" it loads the scan utility, and automatically does an overview as test @ 50DPI... How can I disable this, or change it to do a color scan overview at higher res? I know I can change the setting after the overview is done but I'd like to skip this step!

I don't know the direct answer  to your question, however do you not have more control, if you open the scanner/ control panel/ utility and scan a "preview" for there?

all the setting and options of the scanner would be available from this interface, independent of Preview.app

Associated with your printer is scanning app.

All your preferences and settings  (ie DPI , file type jpg/PDF , color, save scan to, etc)  remain intact- after you close and open the next time you want to scan.

I would look in your ~/applications folder for a" Epson Scan"  app or some such,  and drag it to the Dock.
