I have the exact same problem, but for me the 3g signal has disappeared permanently, restarting the phone does nothing for me and i havent been able to find a way to get it back.

Yes happened to me too. I think we have the same carrier (the one without LTE)? Bought the iPhone 5 from Singapore. After updating to 6.1 yesterday it doesnt show the 3G notifier on the status bar despite numerous restarts, network resets and repeated toggling. The problem is software related since 3g still works with my iPad 3G. I'll do a full phone restore and post the results afterwards but I think the problem is firmware related.
If it doesnt fix this then we're all dead. I dont know how long it will take for this problem to be fixed and we're spending for a data-plan that we can't use.

Dude are you using sun cellular? I think im having the same issue. When toggling 3g before it fixes the data after updating to 6.1 getting stuck on edge, 3g doesn't kick in. Any workaround?

i use globe prepaid sim card, with supersurf 3g service
ive had some luck getting my 3g back online using this method, not sure how well it will work for the rest of you, but here it is:
turn off automatic carrier settings in settings -> carrier -> off
select the carrier that you use, globe telecom in my case
turn off LTE in general -> cellular -> enable LTE off
i also turned off data roaming, not sure if that makes a difference though
it seems strange, but ive gotten my 3g back doing that, and im also able to use personal hotspot now, which i wasnt able to use before the 6.1 update, so..... slight bonus?

Im from Malaysia.. using Iphone 5.. Maxis Plan.. having this freaking problem also just right after the update..!..
really frustrating when it happen..
switch on to 3g.. but yet still stuck on Edge... no 3g or what so ever...
tried everything in stages..
1. Reset network.. Done..
2. Reset all Settings .. .Done..
3. Turn on airplane mode and turn it off. dont know how many times already.. Done!!
4. Call my Customer Service... they said want to reset location or something. Done!!
5. I restore my Iphone 5... Done!!..
Conclusion!!... still cannot......... stuck on Edge...
Apple come on man.. listen to our problem over here....

Hello! I have this problem on my iPhone 5 too.. I updated yesterday to iOS 6.1 over wifi ofcourse.. I only noticed after a few hours when I wasn't on wifi any more that I was stuck on Edge.. I have to manually search for the network, get 3G but it doesn't stick.. It keeps going back to Edge.. I'm on Sun Cellular too.. Can anyone help me on this, any manual configuration or something? I don't even have that LTE button..

I'm a Maxis user from Malaysia and I noticed that this particular issues does not occur on other Telco carriers. So I suspect it could be a carrier issue. I also upgraded to 6.1 and faced intermintent issue. Goes to 3G and back to EDGE. But most of the time it stayed on EDGE. The toggle button does not function at all! It did on 6.0.2. After the upgrade the connection goes to EDGE "whenever" if feels like it although there is a strong 3G Signal.

It is somewhat a telco problem (not having enough 3G towers and configuration for the phone to choose on) but it is also somewhat the fault of the OS and how it handles radio refresh. The 3G toggle doesn't cause the radio to do a refresh of available networks. Very frustrating(!)

After upgrading to iOS 6.1, I've lost the ability to switch off 3G. This is really frustrating as I normally switch off 3G to conserve battery when needed as WhatsApp and iMessage work fine on EDGE/2G.

I'm from INDIA and Using the RELIANCE as a carrier
After updating to 6.1 os on iphone 5 i'm not able to toggle between the EDGE and 3G signal
it permanently stucked on EDGE signals

This solve my problem. Hope this works on all of you as well.
Step 1: go to settings select carrier and turn off automatic
Step2: wait until you can see other carriers other than your own
Step:3 select a different carrier and wait until your phone says No Service
Step 4: then select your own carrier and you should now be back on 3G
Step 5: that's it don't reset your phone because this will reset all of the above! When your phone isn't showing a 3G signal just go to settings and turn on airplane mode and off again. That will force your 3G signal back!
