First, call the airline. It's very possible that you will benefit from an honest flight crew. Just last week someone on here was reporting that they recovered their iPad via the airline. SO contact the airline, contact the security department of the airport. You may need to give them your serial number of your device, which you can find through iTunes.
As to the find my app, unfortunately it's limited when it comes to wifi ipads....your device is only visible when it's online and if they can't get to it to get it online then it remains invisible. (Small price to pay to safeguard your data)
If a bad guy snagged your iPad then they will most likely hook it up to iTunes, wipe it's memory and resell your device. Your data will be safe but since the 'find my' app works more to find 'Joe's iPad' instead of 'serial number XXXXXXXXX' once an iPad is wiped then it's pretty much lost.

I also read similar stories on here for lost iPad on airplanes.
Sadly I was travelling with Brussels Airlines, where they now say; if I contacted the lost property department - where they say, no ipad was brought in from your flight - there is nothing we can do...
I'm just wondering if a bad guy snatched it, wipes it for re-sell - and then somebody goes online with it.
- will it then still show up in my 'where's my iPad' - or does wiping it only deletes data from the Ipad - I will i see it forever in my cloud (reminding me of my own stupidity for loosing it)

As I understand it, if it's been wiped, it'll eventually fade from your iCloud. Fortunately I've never dealt with that situation so I have no direct experience.
It's possible that some opportunistic passenger who deplaned after you saw it and snagged it. Also possible that an airline employee is less than reputable. some are very honest (I was in an airport last week and heard them paging 'passenger so and so, return to gate XX and retrieve your phone please') but not everyone.

Report to police along with serial number. Change all your passwords.
