Whether they will appear in the cloud will depend upon what country that you are in - tv shows and music videos can't be re-downloaded in all countries, and even if you are in a country where they can be re-downloaded there is no guarantee that they will remain in the store. You are better off copying them to your computer's iTunes via File > Transfer Purchases (File > Devices > Transfer Purchases on iTunes 11) so that you can take your own backup copy of them

iCloud only stores your device data backup, but not any actual purchases.
You can delete any purchased content from the device, and download it at a later date free of charge. The historical Purchases list makes this possible. Basically, once bought you will always have access to the content freely, as long as its available in the App or iTunes stores.
Alternatively you can transfer your purchases to the Pc you sync with, and keep them their for later usage. Should they ever be removed from the stores, the backup on your PC will still let you access them.
