For the avoidance of doubt, did you back up your photos or sync them with photo stream, the two aren't the same.

You would need to restore from the back up you made.
Navigate to Settings > General > Reset > Erase all contents and settings on the device you want to restore.
When this completes and the Set-Up Assistant starts, choose "Restore from iCloud Backup" and enter your iCloud account and password. You will see the three most recent backups for each of the devices on which you enabled Backup. Choose which backup to restore from.

What if I only want a couple things out of the back up (a few photos, not the thousands)

It's all or nothing when it comes to a restore.

I'm trying to upload old photos that are on my photostream via photostream to my new imac but its only done 100 or so from the beginning of this year. How do i upload the rest?

I did that, and it restored everything except my photos. How do I get it to restore my photos?
