Because the warranty and AppleCare of the iPod on covers defects in the iPod. liquid damage is not a defect.

Just to expand on lllaass's post, warranty covers manufacturing defects, not abuse by customers.
The term abuse in this sense, means improper usage or treatment.
You dropping it down the toilet, in a cup of fizzy drink or putting throught the washing machine, even accidently, is improper treatment.
