1) How do I get an application down to the dock? When I drag the icon from Finder to the dock, it is not accepted, but an icon is created on the desktop...

 

2) Every so often, the page "blows up" (zooms in)! How can this be stopped? It is easy, of, course, to return to normal view via View>Actual Size, but is rather annoying.

    You also need to drag app icons to the left of the divider, the right is for minimized apps and files.

    Or...

    With the app open you can right click > Options > Keep in Dock.

     

    As for the sooming you are likely doing it with the mouse or trackpad (resting a finger somewhere while moving other fingers), you can turn zooming off on the OS level (system settings mouse/trackpad) but some apps have their own zooming setting.  It depends on what app is zooming in.
