Go to System Preferences (under the Apple menu) and select Users & Groups. Click on the lock in the lower left corner and authenticate with your username and password. Click on your account name and then the Login Items tab. You should find iTunes listed in the items that will open automatically. Select it and then click the "-" (minus) button below.
