In the info tab for an album's ID3 tags there is a place for Artist, Album Artist, and Composer. You can fill in all the information then enable all 3 columns in the iTunes browser, in Song view. Then yu will be able to click the column by which yu want to sort the albums. You can also choose how to sort in Album view by pulling down View > View Options and choosing the options you want to sort by.

With regard sort order, the sort field is normally left blank except when a title starts with "the" or "a". This is dropped and sort value for example will show "Beatles" rather than "The Beatles". I don't know how this would affect German titles.
With regard your example of Claudio Abbado this would be sorted by "C" unless you entered Abbado, Claudio in sort field.
In my library I decided to use composers mame in album artist field - show as Bach, johann Sebastian for example. Using this method I keep all the composers music together. This way I can display all my Bach music under artist view.
Also under song view, I can select column browser and add composers instead of genres.

I also wanted to suggest that you can use the "sort" fields if you want. They will work just fine. You might want to experiement with them some to get the results you want.
