This is beacuse of your Apple ID. You need to go to Settings > Messages and remove the appropriate email addresses and/phone numbers. But they can be reactivated by your children as you will not be able to remove it completely. You are best to set up an Apple ID for your children.

To stop apps from syncing you need to go to Settings > iTunes And App Stores.

You can easily set up an Apple ID on the iPod by going to iCloud.

The problem is that the your ID being used to send the messages is registered as a "can be reached at" address on your daughters iPods.

You can either turn iMessage off on their iPods by Settings > Messages > iMessage set to OFF or you can get Gmail email addresses for your daughters and Go to Settings > Messages > Send and Receive and change the "You can be reached by iMessage at" addresses appropriately.

The reason that you are getting their Apps is that you have Settings > iTunes and App Stores > Automatic Downloads turn ON for Apps on your iPhone.

No problem. The thing to remember is that Apple ID's are not supposed to be shared, however I know it's difficult when children are concerned.
