It's not a feature I use, but if you are in the list view, you can set up columns using View Options and then sort on them according how you have set up things in get info.
In case you have nt found out, you can make itunes 11 look more like 10 as follows,
ALT shows the menu bar temporarily
CTRL+B show/hide menu bar
CTRL+S show/hide side bar
CTRL+/ show/hide status bar
To make search more like it was, click on magnifying glass in search bar and uncheck "search entire library"

Thanks for the help. I used your tip and can now sort by categories. So thanks for your help with that.
I still have the problem with how the new downloaded pdfs show up on the iPad.The iPad treats them differently from the old pdfs. The iPad lists the new pdfs at the top of the category list & then puts in a separate subheading (simply repeats the category title such as UKE Songs) with all the old pdfs listed there. Instead of one nice long list I end up with two subcategory lists. This becomes a real nightmare when dealing with larger categories which have easily over 450 songs in them.
How do you get new files to integrate within the older category listing? I've checked out the info listed in the GET INFO menu & it appears that the info lines up for both old/new files on the screen. So I'm really lost as to how to do this.
