That's because OS X 10.7 Lion is a paid upgrade that you can't get from Software Update. The most recent version is OS X Mountain Lion.
First, see if your Mac is supported > http://www.apple.com/osx/specs If it's compatible, make a backup of your data, open App Store and purchase OS X Mountain Lion. Then, Mountain Lion will start downloading, and when it finishes, the Mountain Lion installer will show up. Just follow the steps to upgrade to OS X Mountain Lion.
Also, check if your apps are supported > http://www.roaringapps.com

If you have another iPhone, iPod touch or iPad and you have an iCloud account, there are some workarounds to get some iCloud services working on Snow Leopard > http://www.wilmut.webspace.virginmedia.com/notes/icloudSL-m.html
However, if you want all iCloud features, upgrade to Lion or Mountain Lion following the steps of my first comment
