Most of the people I deal with barely understand what I mean if I ask them to send me .doc instead of .docx files, so that's not really a solution.
Seems like there's a major bug in Mail that has persisted for several years now when communicating with Exchange. Given the frequency with which people use Exchange in business, one would hope Apple would take notice and fix it?

This bug has been around in Mail for quite a long time, yes. It's incredibly annoying. Attachments just stop showing up every once in a while. If I quit Mail and restart it, then they appear, but it's a really stupid bug. I don't know if it's only for Exchange (that is what we're using). I do wish Apple would fix it eventually.

I got here by destiny. After many days looking for a problem in Mail I just found the solution.
My Mail program started developing the following problem progresively. All attachements stop showing as they usually do. In the case of a jpeg picture, I could see the image. In case of a folder, I could see the folder. This is the default way, I believe and the one I've always used since I moved to Mac.
This happenned in all trays or boxes. Very annoying. Besides, many recipients had problems too seeing my attachments. I had to explain they were in the mail but hidden somehow. They had to llok for them.
Luckily I found this thread. I typed in terminal as you said. Instantly all my attachements became visual again.
It seems you suggested this solution for other kind pf problem but it solved mine.
My system is an 27" iMac running 10.6.8 and Mail 4.6
