I don't think the Mac issue is particularly significant.
I would be looking for one with customer service number in my own country and with a good reputation for reliability and service as well as not being awkward if you try to move your domain away from them.
This might be of interest (you can click column headings to sort criteria).
In UK I have used Tsohost and been well satisfied.

Unsure what you would need that is MAC specific from a server, but I have been running with HostGator since 2000 and no issues what so ever...
