Q: Language settings for iPhone 5

Settings > General > International > Language and Voice Control are both English?  Then they should be in English unless someone sends material in Spanish.

For the sake of completeness, note that there's also a languages select setting in SIRI's config pane. But that only affects whatever SIRI does, unless of course you're doing voice capture for texts.
