I do not want to increase my fonts. If I change my fonts when my mail goes to recepiant it is too large for them. I just want to zoom in on my screen to beable to read it better. Does that make sense? Or am I not explaining it right.

I think what you're doing is looking at your email in the preview pane, in this view Command + will not work. If you open the mail (double click it) then hit Command + the message will zoom. At least that's how it works on my system.

Your advice is fine while viewing an already sent message. However, it doesn't work for me when I am creating a NEW message. I can increase the font, but then when sent the recepient gets, HUGE text.
Example: While typing this message I could use Command + to increase the size of my screen shot, but I am not increaseing the font. This same technique does not work on my I-mac in write new message or responding to an existing E-mail.

Sorry that's just the way Mail works. Here are my settings in Mail, see if yours are different, if they are try mine then see if it's easier for you. Other wise you will need to turn on the Zoom feature of OS X.
Here are my settings:
If that doesn't work then try zooming, if you don't know how here is a link that explains how in Mountain Lion:

Thanks for your help. It seems like a strange feature to not function in mail. I have this huge screen and can't use it.
I did change my message font per your suggestion. It is a bit better for me,but I don't kmow how "loud" the bigger font will be in say outlook or different mail viewers.
And again, my zoom works just fine, EXCEPT with a NEW mail message I am writing. I did try the different settings per your suggestion with no luck.

As I said, the new font helps, but the real point is that the zoom feature should wourk while composing a mail message and it doesn't.
