Apple rarely posts on these forums and probably can't keep up with reading all of them. The way to get things fixed is to report the problem directly to Apple:
From the "iPhoto" menu (when iPhoto is running), select "Provide iPhoto Feedback". This will take you to a web page where you can report the bug. The more people that report the issue, the higher priority the fix gets!

Good idea Brian, have submitted feedback through iTunes (as it's iTunes causing the problem, not iPhoto)...
Let's see what happens now! (my guess- nothing.)

No dice. The best we can do now is strip all date data from images if you need them alphabetical. There is still no option to reverse the change to iTunes.

Finally found a solution:
Download EXIF Date Changer from
Change EXIF date for all pictures to be the same:
- select a photo folder
- put updated photos in new folder (can replace orginals later when happy)
- set date/time to a given value
- options: clear: Preserve original modification date, select: Set file created date to taken date
Remove album from iPad by sync, then add it again

There should be an option in iTunes (or else on iOS and the Apple TV) to sort photos on date or title or filename. I submitted feedback by the links mentioned some posts above.
At this moment I cannot predict in what order photos will appear on my AppleTV. Sometimes I manage to get the order right, sometimes not.
