Don't know what you mean by "frozen in the restore mode". If you mean it won't restore, try forcing it into recovery mode to restore it: http://support.apple.com/kb/ht1808.

A friend just gave me this phone and suggested that I create an Apple account and download iTunes, which I did, I plugged the phone into the computer so that I could download music, an upgrade message popped up and I clicked, when that failed a recovery message popped up, clicked on that ... now the iphone is frozen in the restore mode. iPhone screen shows a usb cable and itunes icon. I have tried virtually everything on this site. Any suggestions would be great.

Try disconnecting it from iTunes, close and reopen iTunes, then connect your phone again to see if it's detected in recovery mode and you get the option to restore it. If not, you can try putting it in DFU mode to restore it(see http://osxdaily.com/2010/06/24/iphone-dfu-mode-explained-and-how-to-enter-dfu-mo de-on-your-iphone/).
The 3G can be updated to 4.2.1.
