I am trying to organize all my folders. I have my default settings set and one of those is: sort by name. I want everything to also be ARRANGED by name. Right now it says "None" after 'Arranged by'. I have to go in and change each individual folder from NONE to NAME, which is very time consuming. There has to be a way to change everything at once. Please help!

Are you sure Arrange By Name is what you want? The classic organization is Arrange By None and Sort By Name. In List View, with Arrange By None, you can sort by clicking on column heads.

In any case, if that is what you want, arrange a folder. Then View > Show View Options. Click "Use as Defaults".
