The key to successfully extending the AirPort Extreme's wireless network with the Express is that the Express must be within a certain range of the Extreme in order for it to rebroadcast the network with enough bandwidth to be useful.

The SNR is pretty good (27), and as I said, the Express works fine for the desktop. I upgraded the firmware and that seems to have helped some, but the bandwidth is still not as strong as I would hope when I am in the studio. Would it help if I used the Extreme instead of the Express? What I really do not understand is, why isn't the signal stronger when I am standing right next to the Express than when I am 20' away?

I am assuming that the SNR reading of 27 was taken at the location of the Express with the Express powered-off so that we are only reading the signal quality of the Extreme ... correct?
If so, in general the Extreme has a "better" antenna design over the Express. I would second your suggestion to using a second Extreme to extend the first to see if this improves the Wi-Fi situation at the office location. Another option is to move the Express a bit closer to the Extreme.
