I have the same problem, It's a bug in the system. Nothing that iStore will admit but when I asked an Apple repair store they said they had loads of customers coming in with this problem and that it definately is a bug from Apple. The iOS 6.0.1 was supposed to fix it but instead made it worse. A technician managed to fix a few phones by restoring 6-7 times in a row....

I don't think theres a fix.
After every iOS update my wifi comes back but:
Wifi comes back
30 minutes later it's gone and endlessly searching for Networks
After a reboot: Greyed out.
With a little luck you can get it working for a short time. But that's it.

this is what i did to resolve the problem:
1. turn off cellular data, 3g, bluetooth
2. go to settings and "reset network"
3. wait until the phone reboots
4. do a soft reboot (press home and power buttons simultaneously for 10 seconds).
voila! the greyed out wifi came back alive.

I've had this problem since getting a new phone after my original had another problem with the screen, I had the grey wifi problem since getting it (1 months ago,) after reading the forums about the freezer solution I tried it, it actually worked! I turned it off and put it in there for 25mins and now I have wifi. I hope it lasts.

Lajol, salutations. I have only logged in back to thank you for your kind words. I have thought of replying numerous times, but couldn't follow through. You have humbled me, and I wish you nothing but the best.
As an update to my situation, the hair dryer method only lasted five weeks. The issue showed up again. I fixed it again with the hair dryer, but now I knew it isn't a permanent fix.
I ended up selling it at a loss to a guy who said he'd use it for parts and bought an iPhone 4 32GB as I cannot afford to hope that Apple will address the issue.
The iPhone 4 has been working great. So far.
I'll admit Lajol, I have not fully understood what's wrong with it, and in the end decided its a lost cause. My honest advice to anyone who is under warranty, and facing greyed out Wifi is to get it replaced as soon as possible, to avoid further anguish and monetary loss. I sincerely believe that no upcoming update will fix this issue. Sorry.

This helped for a few people and is worth a try. Remove sim and restart. Turn WiFi on and fit the sim again. It worked for me and is still working

Since upgrading to IOS 6 i have had problems with gettign a signal after switching airport mode off. Only way to sort it was to switch off the phone and turn it back on again. A bit annoying, but not too much of a hassle.
So finally decided to upgrade the IOS too see if this litte bug would go. I had skipped an update and went straight to 6.1.2. Since then it stopped connected to any wifi networks. Switched phone off and back on then it was grayed out.
What I have done so far
Restored phone from new
Restored from a back up - old and new
Jailbroke it to edit the mac address - this was pointless as I didnt have a mac addrerss - wifi was showing as N/A
reset the phone a few times
I have managed to get the wifi back but it's now hit and miss whether is connects to a network and if it does it's not for long.
Anyone know if you can go back down to iOS 5 on a 4s?

I tried the dryer trick twice. The first time it worked for 6 weeks. The second time it has been working for 3 months. Now I dare not upgrade it in case it fails again.

Echo-ing statements about getting a phone replaced as soon as this happens. Stood at Apple store for 2 hours the other day only to have them tell me there is slight "water damage" - BS!. Same symptoms as everyone else: Wi-Fi greyed out, bluetooth shows spinning circle and Personal Hotspot not available (figure that one out).
I don't trust them as there are too many people with this issue. Does anyone have an idea of the number?

Like Joe9019 I tried the hair dryer trick tonight after 3 months of greyed out wifi. It worked and is still working after 3 hours and about 90 updates.
The bit I heated is just under the rear lens and LED on the back o my 4s and. Heated it to about 70c with the phone switched on. 70 if you're not sure is too hot to hold. iWeb it cooled down I restarted the phone and bingo wifi selectable and my networks all visible.
I wouldn't believe it worked so didn't try it. It's worth a go though if all else like me has failed.

So I am thinking put the phone in the freezer and the wifi will work.. How stupid is that.. Lets go to Starbucks and borrow the freezer so I can download something.. We I put the 4S in the freezer for a couple of hours and what do you know.. The wifi works now.. how long it will work I dont know.. and Apple cant say this is a wet phone or abused. Look at this tread hundreds of people having this issue. What is the fix for this and how are they going to make good on this problem? Come on Apple get someone on this and get it taken care of.. or you will start loosing customers..

I tried the freezer 3 times chilled to -19c. Worked once for about 5 mins then it greyed out again. Hair dryer worked for me !
