This is honestly - generally a hardware related issue.
I would make certain you have saved a backup, restore again - when it asks to setup as new or restore from backup, choose setup as new and then go to settings and look at wifi again.
If its still greyed out its hardware and your iphone needs to be replaced.
If you can choose wifi, then there was a bug in your backup.

I updated my software to ios 6.2 last week and have since been unable to use wifi as the option is greyed out. any ideas on what to do about this?
