If it is an app you downloaded, hold the app until the apps start to jiggle, then choose the x at the corner to remove it.
If it came preinstalled on the iPad (no x appears), you cannot delete it. But you could move it to another page.

If you mean, how to you remove an update notice from the App Store, the only way to do that is by updating. If you don't want to update, you'll just need to live with it. Sorry.
