As to the defaults, I'm not certain if it is completely fixed, but if you go to Preferences and set the template the way you want (fields, default labels, etc), it should set those as the defaults for new cards.
Google used to sync with contacts, but I'm not sure if it still does. You would just add your Google account info in the Accounts tab of preferences.

can i just please ask you if you know what the adding of the Google Account is supposed to do? i am in a position where i have spent just a ton of hours working my way through all the Previous Recipients that i added from Mac Mail and this was all after having some kind of metadata corruption that meant that every time i proofed the database /before/ this it got recorrupted and i went back months later and proofed it again, and then did this again...
i mean, is there documentation somewhere as to the best way to do this? should i zero out my GMail account for all my contacts and make sure they are in my Mac Contacts? should i expect to be able to sync Groups/Categories? will adding contacts to the GMAIL database also add them somehow (with Groups?) to the Mac Mail contacts?
i really don't want to test this at this point without knowing what it is supposed to do and without having a template to follow.
anyway, awesome help (thanks!) and perhaps i can let that sit out there in case anyone knows or was braver than i am with this...?

I'm pretty sure I had it set up to sync my contacts in the past, but that was quite a while ago. I don't keep contacts on Google at all anymore, so I really don't have any useful advice.
