Each Section in a document can have its own Header/Footer and page numbering.
If you want a different header:
click in the text just before the page > Menu > Insert > Section Break
Inspector > Layout > Section > uncheck Use previous headers and footers

If you need to have a different Header on each page, and you want text to flow freely from page to page, you should not be using the Headers feature. Rather, insert Text Boxe on each page so that there is no tendency to repeat from page to page. If you set Object Causes Wrap in the Wrtap Inspector for you text boxes, they will push the (effective) top margin down when you box needs more space.
