Templates show multi-page brochures but no help in how to print these two-sided monsters

I want a menu-like brochure -- two pieces of paper  8 half pages with each one approx 8 x 5.5  when an 8 1/2 x 11 is folded in half and made into a booklet.

It won't work at all if you don't switch to landscape orientation.

 

The Template in Pages shows a front and back option, an inside page option, and either all text or blank.  I have not a Clue on what to do after I print the first side of the first sheet, consisting of the front and back.   My printer prints on the top side of the paper in the feeder.  It seems to flip the image, as an x at the left bottom of paper going into the tray,   shows up in the right bottom corner of the image from the printer.  In what order do I set the rest of the pages so that when I print the second side of sheet 1 that the first inside half page is right behind the front cover?
