I have tried several times, but it never accepts my incoming and outgoing server changes. Always defaults back to original.

Perfect! the workaround took me less than 20 seconds, and works perfectly, both sending and receiving, thus far. And just so people with multiple email accounts know, this fix hasn't interfered with the other two mail accounts i have in Apple Mail (a gmail IMAP account and my local ISP's POP account)... as it shouldn't, but people do wonder. I'm in OS 10.6.8 on Macbook Pro, Apple Mail 4.5. Thanks Shundra!

I have tried unsuccessfully many times and yes, I did hold down the option key so that it said continue vs. create throughout the process. Any ideas?
It has to be the computer and the OS since my ipad works fine with the same ISP.
This just does not work for me, why in the world would apple obsolete a computer only 4 years old!
Makes NO SENSE.

Thank you so much, shundra. I'm stuck in 10.6.8 land because of Quicken and a distrust of the Lion patch (probably irrational). My old pre-cloud mail settings for some reason gave up the ghost today.
I was getting a bit desperate when I found your visually and logically clear directions.
So far so good.

thanks. worked like a charm. now am going to check to see if i need changes to ical to get it properly synced. was already using one mac with Lion but my imac is still running SL because of certain plugins.

I have tried to set up the Icloud mail account, but I have forgotten my original password from the Mobile.me account that I just deleted.
How does one go about retrieving a password that can no longer be remembered?
By the way, I need this password to set up my Icloud mail account,

Go to http://appleid.apple.com and click 'Reset password'. Sign in with your ex-MobileMe account address. A new password will be sent to the associated (non-Apple) address which hopefully you had set up.
