With no point of reference I guess the answer is maybe
As to pages with particular orentiation of photos - in most page layouts the photos frames switch automatically to match the photo
Before ordering your book preview it using this method - http://support.apple.com/kb/HT1040 - and save the resulting PDF for reference - the delivered book will match it.

I was using iPhoto 8 before.
I don't understand why there are fewer options now - that seems like a move backwards.
I was able to correct most of the layout, although I had to compromise and rearrange photos to adjust for the missing layouts. I still have a glitch on one page; iPhoto won't let me select one of the images to change the frame option, even though I can select and change the other image on the page. It just selects the whole page and goes to the Layout menu instead of Options. I'm going to have to just leave it on the default frame, although I don't like it.
Thanks for the link on the PDF. I had used that last time, but couldn't recall how to get to it.
However, I've just prepped the PDF, and although the first few pages look fine, the rest is all messed up- showing only half of some pages, and showing the rest as 1/4 of a larger white page. The layout looks fine in the All Pages view in iPhoto, but this makes me very nervous about placing the order.

I haven't had problems in general- just with this book project. I just spent about an hour on the phone with Apple support, and thought we had it somewhat resolved by throwing out the preferences file, etc., but the problems are persisting. We even tried creating a new iPhoto Library, since they thought that was the issue....but in working with that since I got off the phone, there are still problems. For instance, the frame orientation still doesn't change with the photo, at least within the theme I'm using (Family Album).
At this point I'm about to throw in the towel on this project.

Try a different theme - frame orientation does not change for some themes and for some ayouts

That theme are you using?
I know this is like closing the barn door after the horse has gone but for future books you might consider the workflow described in this tutorial: iP08 - Archiving an iPhoto Book for Editing and/or Ordering at a Later Date.

Interesting- I notice that the selection of frames changed even between v8 and v9- for instance, the oval vignette was available in a straight vertical orientation in v8, but in 9 and 11, only in a tilted version. I didn't want that casual a look for this project.

I don't know about the archiving option in the link....it looked a little time-consuming, and I'm not sure it would work with these version changes. What happened in this case was that in v11, I had "custom" options which appeared for the page layouts, which the tech I was talking to could not see in his version of iPhoto. Apparently they were saved in there from the previous version. I don't know if some conflict between the two was causing the trouble. When I created the new library and attempted to recreate the album, some, but not all, of those custom options still appeared in that theme.
Anyway- in the end, I used the new library to recreate the album with a different theme (Formal). It is not quite what I wanted, and it was another time investment on top of the 5 hours I had already spent just trying to do this reorder, but I did come up with something I could upload with reasonable confidence that it will print correctly.
