Depending on the exact model of G3 PowerBook, you can run up to Mac OS 10.4.11:
--PowerBook G3 M4753 "Wallstreet": OS 10.2.8
--PowerBook G3 M5342 (Bronze KeyBoard) "Lombard": OS 10.3.9
--PowerBook G3 M7572 (FireWire)"Pismo": OS 10.4.11

The "Wallstreet" requires special hard drive partitioning to run OSX but it is doable. The installation on the two newer modles ins starigh-forward if you have a full retail insatll dics set.
Using a third-party hepler application, I have installed OS 10.3.9 on three Wallstreets for a friend. 10.3.9 actually runs better one those machines than does 10.2.8, which was not a completely "polished" version of OSC IMHO.
