iPad do not use Phone number since it's not a phone.
If you have an iPhone then change the associated phone number in Apple ID.

It's best to use an email address (gmail.com?) for FaceTime and iMessage on your iPad.

I would like to see texts that are being sent to my iPhone on my iPad. My iPhone is not working right now. When I first set up iMessage on iPad I used my wife's iPhone number and can see all of her texts.

I would recommend having the iPhone and the iPad in the same location. Update the iPhone with the new or modified information. When the pop question appear on the iPad, answer yes, and then you will have both or all devices updated to the new information.
