Sorry, not a feature of the iPhone, & virtually all apps that "claim" to provide this ability either don't work or don't work very well.
You need to look at something like this:

Shame you can't record with such an advance phone, silly it is, but I suppose you could always put your phone on "record video" to record a voice, if that helps.

Mostly because it's illegal to record calls without both parties permission. At least that is in the USA.

That and the rules about when it is legal and what conditions have to be met for it to be legal vary so wildly that it becomes not worth implementing if any liability at all could possibly be placed on the manufacturer.
