What can't my "table" that contains text automatically flow from one page to the other like it does in Windows with the same table hader repeated at the top? What am I doing wrong?

Tables can flow from one page to the next in Pages only if they are inline. Floating tables will "disappear" at the bottom of a page. Also, be aware that tables in Pages will not break in the middle of a row. If there is not enough room for the row, the whole row will be pushed to the next page.

That's helpful. Obviously, the table is not inline. They do disappear. I think I'll just start a doc and copy that table into it. Thank you.

Just command click on the Table to select the Table object, cut and paste it into the text of a Word Processing document.
