Over time, I'll be adding new photos to those folders. Does or can Aperture automatically update by adding these new photos when they get put into the folders. Is there a way to do this?
Aperture does not have the capability to do this. Adding files to folders that have been imported into Aperture has no effect on Aperture.
There are ways to set up folders so that when files are added to them actions (such as importing the files into Aperture) can be triggered. How this could be used in your case would depend on a couple of factors.
One other question: when I import folders, some become Projects but some things are listed as "Items in [folder]" — what exactly does this mean and how can I make that turn into a regular project?
I don;t follow this. Are you saying than in the Library tab of the Inspector in Aperture there is an entry:
"Items in [folder]"
I've never seen that. If you can describe how you are importing the folders, the exact settings in the import dialog, are you doing Folders and Projects or Projects and Albums? Also a screen shot of the library tab would help.
